Food and Nutrition Services Department

Mission and Vision

The Food and Nutrition Services (FNS) Department is dedicated to promoting the health and wellbeing of our community through safe, affordable, and nutritious food options. Our vision is a campus where every individual has easy access to wholesome meals that support academic success, physical performance, and lifelong healthy habits.

Core Responsibilities

Meal Planning and Production

Our chefs and dietitians collaborate to design menus that meet dietary guidelines while respecting cultural diversity and personal preferences. Menus are refreshed each semester to incorporate seasonal produce, emerging nutrition science, and feedback from students, faculty, and staff.

Food Safety and Sanitation

All FNS facilities comply with local health department regulations and the USDA Food Safety Modernization Act. Staff are trained in Hazard Analysis Critical Control Points (HACCP) protocols, and routine inspections ensure that temperature controls, crosscontamination prevention, and proper storage practices are consistently upheld.

Nutrition Education

We offer workshops, webinars, and oneonone counseling to help community members make informed food choices. Topics range from mealprepping on a budget to understanding nutrition labels and managing special dietary needs such as glutenfree, vegan, or diabetic diets.

Sustainability Initiatives

Our department is committed to reducing waste and supporting local agriculture. Initiatives include composting food scraps, sourcing produce from regional farms, offering reusable containers, and promoting plantbased menu items to lower the carbon footprint.

  • Roasted Root Vegetable Medley A seasonal side rich in vitamins A and C.
  • Greek Yogurt Parfait Layered with fresh berries, granola, and a drizzle of honey.

Accessibility and Inclusion

Our facilities follow ADA guidelines to ensure that all individuals can navigate dining spaces comfortably. Menus are provided in Braille and largeprint formats, and we maintain a comprehensive list of allergen information online and at pointofsale.

Looking ahead, the Food and Nutrition Services Department plans to:
