Overview
The Food Explorations Lab is a practical, inquirybased unit designed for middleschool learners. Lab I The Building Blocks introduces students to the fundamental components of foodcarbohydrates, proteins, fats, vitamins, minerals, and waterand shows how these elements combine to create the meals we eat every day.
Through a series of short experiments, datacollection tasks, and reflective discussions, students develop scientific habits of mind while gaining a personal connection to nutrition and health.
Core Concepts
- Macronutrients: Understanding the role of carbohydrates, proteins, and fats as sources of energy and building material.
- Micronutrients: Identifying vitamins and minerals that support metabolism, immunity, and growth.
- Hydration: Recognising waters function in transport, temperature regulation, and chemical reactions.
- Food Labels: Learning how to read Nutrition Facts panels and ingredient lists.
- Balanced Meals: Applying the MyPlate model to create meals that include each food group.
HandsOn Activities
1. BuildYourOwn Nutrient Chart
Students receive a set of common foods (e.g., apples, beans, cheese, olives, water). Using printed nutrition cards, they record the amount of each nutrient per serving and place the cards on a large chart. The visual display helps them see how different foods contribute to daily needs.
2. Simple Starch Test
Using iodine solution, learners test a range of kitchen items (potato, bread, rice, candy) for the presence of starch. A blueblack colour change confirms starch, reinforcing the concept that many carbohydrates are stored as starch.
3. Protein Precipitation Experiment
By adding a small amount of vinegar to milk, students observe curd formationa basic illustration of protein denaturation. This activity connects the chemistry of cooking with the structure of proteins.
4. Fat Extraction with Soap
Students place a small piece of butter in a jar with warm water and a few drops of dish soap. After shaking, the soap pulls fat molecules into the water, creating a milky emulsion that can be observed through a clear container.
5. Vitamin C Spot Test
Using a thin layer chromatography kit, learners separate vitamin C from orange juice and compare the spot intensity to a standard chart. The activity introduces the concept of vitamins as essential micronutrients.

Assessment
Assessment is integrated and varied:
- Lab Notebook: Ongoing entries documenting observations, data tables, and personal reflections.
- Concept Map: At the end of the unit, students create a digital or handdrawn map linking each nutrient to its function and food sources.
- Quick Quiz: A 10question multiplechoice quiz checks understanding of key terms and label reading.
- Group Presentation: Small groups design a balanced meal plan for a fictional athlete and explain their choices using the buildingblock concepts.
