Understanding Ethylene Gas

To master the art of produce storage, one must first understand ethylene gas. Many fruits, such as apples, bananas, and tomatoes, emit this natural plant hormone as they ripen. If sensitive vegetableslike broccoli, carrots, or leafy greensare stored near ethylene-producing fruits, they will wilt, turn yellow, or spoil prematurely. The golden rule is to keep ethylene producers away from ethylene-sensitive items.

Countertop Storage

Not everything belongs in the refrigerator. Certain fruits and vegetables thrive at room temperature:

  • Tomatoes: Keep them on the counter away from direct sunlight. Refrigeration alters their texture and dulls their flavor.
  • Stone Fruits: Peaches, plums, and nectarines should be kept on the counter until they are soft and ripe. Once ripe, you can move them to the fridge to extend their life for a day or two.
  • Potatoes and Onions: Store these in a cool, dark, and well-ventilated place. Never store them together; the gases from the onions will cause the potatoes to sprout prematurely.
  • Bananas: Keep these separate from other produce. If they ripen too quickly, separate the bunch to slow the process down.

Refrigerator Basics

The refrigerator is ideal for many vegetables, but humidity control is key:

  • Crisper Drawers: Use the "high humidity" setting for leafy greens and vegetables that wilt easily, such as spinach, lettuce, and herbs. Use the "low humidity" setting for fruits that release ethylene, like apples and pears.
  • Leafy Greens: Wash and dry greens thoroughly before storing. Place them in an airtight container lined with a paper towel; the towel absorbs excess moisture, preventing the leaves from turning into slime.
  • Berries: Do not wash strawberries, blueberries, or raspberries until you are ready to eat them. Moisture promotes mold. Keep them in their original containers or a breathable box in the main fridge compartment.

Root Vegetables and Herbs

Root vegetables like carrots, beets, and radishes last much longer if you remove their green tops before storage. The greens draw moisture out of the root, causing it to become rubbery. Store the roots in a plastic bag with a few holes for airflow in the crisper drawer.

Herbs should be treated like fresh flowers. Trim the ends of sturdy herbs like parsley and cilantro, and place them in a glass with an inch of water, covering the tops loosely with a plastic bag. Keep them in the fridge. For woody herbs like rosemary and thyme, wrap them in a slightly damp paper towel and place them in a sealed bag.

Freezing for Long-Term Use

When you have a surplus, freezing is an excellent option. Most vegetables, such as broccoli, green beans, and corn, should be "blanched" before freezing. This involves boiling them for a minute or two and then plunging them into an ice bath. This process stops enzyme action that causes loss of flavor, color, and texture. Once blanched and dried, lay them out on a baking sheet to freeze individually before transferring them to freezer-safe bags to prevent clumping.
