Fermentation, on the other hand, encourages the growth of beneficial bacteria (like Lactobacillus) that produce lactic acid. This natural acid acts as a preservative, while also enhancing the nutritional profile of the food through the creation of probiotics. Sauerkraut and kimchi are classic examples of fermented preservation.
